Reconnect with Your Bundt Pan

I'll admit it. I think I've hated Halloween for quite some time. It's just not my thing. To be honest, any other holiday excites me more. In rebellion against it, my friend Celina and I opted out and stayed in to bake pumpkin goodies. Call me a prude, but it was such a better alternative in my mind.

Inspired by The Food Librarian's "I Like Big Bundts" month of recipes, we made a Pumpkin Spiced Bundt Cake with Buttermilk Icing (recipe here). Bundt cakes are delicious and just plain pretty on so many levels. I think baking batter in a bundt pan makes any fall day brighter. How many times do you think I can say "bundt" in one paragraph?

We brought our cake into the office and it's since been referred to as "perfection." Not our words, theirs! Thanks to the buttermilk and the pumpkin purée (have you stocked up despite the shortage?), this cake is moist and delish. For the icing, we used a little more buttermilk than the recipe called for so that it wasn't too stiff. Try it. You'll like it.

If you're not the homemade-pumpkin-baking-type but have a Trader Joe's nearby, their Bread & Pumpkin Muffin Mix is also to die for and is only a whopping $2.99.

Now go. Reconnect with your bundt pan!

Some of those Big Bundts have looked absolutely divine. I have about seven of them bookmarked to try. Meanwhile, next time you and Celina have a baking extravaganza, can I come? I'm just starting to get into baking after years of claiming to hate it, and could use some company. Or maybe I should just have the two of you over...I could make Chicken Cordon Bleu! ;)

I just got a new (it was my Mum's) stoneware bundt pan and I'm so excited to try using it out! Maybe a pumpkin spiced bundt cake is in order!

For an English girl like me you'll have to explain what a bundt pan is. I've no idea? The cake looks fab and I've loads of home grown pumpkin and a husband that could eat cake all day.

Agreed. A perfect alternative to dressing up as a slutty nurse... or cab driver... or teacher... etc etc.

Sounds yummy! I am thinking of making it for Thanksgiving as alternative to pie.

Yippee! What a lovely Bundt! I'm tickled that you made a Bundt. Wasn't this one good? I think it has received the best reviews so far! Thanks again for visiting my blog and I hope you bake a Bundt for National Bundt Day (Nov 15th!) - mary the food librarian

That sounds delicious and it looks perfect too! My favorite cake recipe of all time comes out best when in a Bundt pan so I have two of them (because I always double the recipe and)- 7up Cake. I know it sounds kind of icky but it's heavenly!

I was just in Trader Joes today as a matter of fact. I saw the Pumpkin Bread mix but got sidetracked by the coffee machine and taste sample!

That looks wonderful, but pumpkin in ay shape would be wonderful. I am definitely going to have to try it. I can't remember the last time I used the bundt pan. Your halloween sounds perfect to me. I have the same feelings about the day.

a. did I buy that pumpkin muffin mix? If so, I'm awesome.
b. "reconnect" connotes that at one time I had a relationship with my bundt pan (if I in fact owned one, which I do not).

Dave, unlike most people I wouldn't expect you to have a bundt pan. :) Maybe Home Run Inn has a dessert pizza!
