Breakfast of Champions

I've been trying to be better about eating breakfast these days. While there are various and sundry breakfast foods that thrill me to no end, most weekday mornings I find myself bored at the prospect and uninspired to make something delicious. I then find myself nearly starved around 10:00, justifying a Boston cream donut. You know the drill.

In my attempt to keep any remnant of my girlish figure, my mother dearest introduced me to the perfect solution/concoction to combat the breakfast woes. Using whatever fruit is waiting for you in your fridge, some yogurt of your choosing, and some quick oats (uncooked), you've got a breakfast of champions in the making. I had my doubts about the uncooked oatmeal at first, but they were put to rest after my first bite. Trust me on this one. This dish is refreshing, healthy, and fills the tummy right up until lunchtime. The recipe follows...

Sali's Berry Breakfast
Combine the following ingredients and serve with a smile!
1/4 cup quick oats
1 or 2 spoonfuls of yogurt (I'm a blueberry kind of girl, but it's really up to you.)
2 cups total of fruit (I like strawberries, blueberries, red grapes, and some peach or nectarine. You know what fruits you like.)

Ooh, yum! I actually eat hummus for breakfast a lot of times, because well, I l.o.v.e. it and it's a good source of protein. I also like making toast with a slice of cheese and a sliced-up tomato on top. It can be hard to think of quick, tasty options first thing in the morning. Thanks for this suggestion!

My mom just reminded me that another ingredient is a few crushed walnuts...one of the best parts!

Yum! If I had an extra moment, I might brown the oatmeal in a pan for a minute or two. Or maybe not.

Sali knows what she is talking about. I eat this almost every day and it is delish! If I don't have uncooked oatmeal, sometimes I'll substitute a handful of Cheerios or corn flakes. Yummmm,

Oh my stinkin' heck that looks good!! Hmmm. I'm sooo giving that a try soon! What kind of fruit do you use in winter when all the summer fruits are available??

Well...at this point I have only made it in the summer, so I'm not sure what I'd do. Maybe I should start canning...or move to California! :)

I eat something really similar most mornings. Plain yogurt, a touch of honey and some fruit. I have found in the winter that frozen fruit (no sugar added) works really well. A little more on the runny side once it starts thawing, but still really tasty. I'm going to have to try this version though. I bet the oats go a long way to keep you full longer.

I've found I'm an oat lover - maybe I was a horse in another life! This is one of my favorite things to eat! And I was going to suggest walnuts - and then I see you added that here!

I was going through some of your other posts and saw your stack and whack (which looked like more AB prints!) and it is AMAZING! My mom has done some of those, and the stack and slash (more random) and I love the way they look. Can't wait to see the finished product.

Oh, and if you haven't found a long arm quilter yet - my mom and her sisters have a machine - not sure what they charge, but if you need a hookup I can help you out. They live in Utah, but I'm sure you could mail it. . . . .
