Thanks for all your encouragement! I had already bought most of the ingredients for the Pioneer Woman recipe, but I looked at all the suggested recipes and concluded that I needed a little less pumpkin, one less egg, and NO water bath. It worked, and now I've seen so many cheesecake recipes that I can't wait to try! Let me know if any of you see a fire sale on cream cheese.
